Aaah but it’s not in the egg it’s on the eggshell, if I remember my training correctly. You want to avoid contaminating your eggs you gotta crack them on a flat surface–not the edge of the bowl/anything that might push shell through the membrane–then pry em open, making sure none of the shell falls in.
Alternatively buy pasteurized eggs. I use them for making chocolate mousse/anything that requires raw eggs.
The point about baking the flour first for this is on point though. You can get ecoli from undercooked flour, as Gold Medal demonstrated last year when they had to recall a bunch of stuff.
Does the US not vaccinate chickens for salmonella? Also I did not know this about flour, how interesting!
Not universally, no, I believe it varies from state to state. Also what with chickens becoming popular pets, I believe salmonella is supposedly on the rise again. Sad times.
